Santorini is well known for her agricultural products. The particular consistence of its volcanic ground, the winds and the climate are well disposed for the cultivation of many agricultural products. Fava is one of the most famous products of the island. It belongs to legumes and its size is almost like a big grain of sand.
The area that is being cultivated in Santorini reaches 2000 square metres. Seed time is in November and harvest in May. Its elaboration follows. That means drying in the sun, cleaning, peeling and cutting that are carried out by the farmers themselves.
In taverns all around Santorini you will have the chance to taste various recipes with fava.

TOMATO
Another traditional productof Santorini is tomato.These small waterless tomatoes belong to the variety of tomatoes that have small beans and are bushy.its beans often have the size of a cherry.its peel is hard and the taste unique.Befire the 1956 earthquake tomato was the main agricultural product of the island.till then there where 9 factories producing tomato juice.but now there is only one,the one that belongs to the Union partnership of products in Santorini.You can taste these small tomatoes in the taverns of Santorini.

WINE
The wine of Santorini is the most famous product of this island.From its vineyards this excellent wine is produced.Its quality and distinguished taste are bound to the combination of the ground which is rich in inorganic elements and poor in organic.
One of the most known varieties of wine is Asyrtiko,a white variety with excellent adjustment to the special environment of Santorini.The famous Visanto,which is sweet white or red wine,is made out of dried in the sun grapes.Nikteri a white dry wine.it took its name from wineproducers who gather in the grapes during the day and and elaborate them at night when temperature is lower.So,because the process of production is carried out at night,it was named Nikteri.In most wine factories there is also a wine museum available for visit.
